• Farfalle pasta - 300g
• Cucumber, diced - 1
• Cherry tomatoes, halved - 200g
• Black olives, sliced - ¼ cup
• Red onion, thinly sliced - ½ cup
• President Brie Cheese, crumbled - 100g
For the dressing:
• Extra virgin olive oil - ¼ cup
• Red vinegar - 3 tbsp
• Lemon juice - 1 tbsp
• Dried oregano, minced - 2 tsp
• Honey - 1 tsp
• Garlic cloves, minced - 2
• Salt and pepper
• In a small bowl, whisk all dressing ingredients thoroughly until combined. Set aside.
• Cook the pasta according to the package instructions. Drain the pasta, and then rinse it under cold water.
• In a large bowl, add the cooked pasta, cucumber, tomatoes, olives, onion and President Brie Cheese.
• Pour the dressing over the salad. Toss to coat.
• Top with more crumbled President Brie Cheese.
